Biang biáng noodle is a traditional flavor noodle in Guanzhong, Shaanxi Province, and it is a traditional Shaanxi belt noodle. Named after the sound of biang and biang in the production process.

In the past, the old man said, "River biáng biáng" (referring to Weihe River water). A long time ago, there were sweet water and bitter water in the courtyard street well; The Weihe River water was not polluted before, so the backwater was poured into a wooden bucket, precipitated with alum and eaten the next day. River water is also used to make tofu.
