Dancing with both hands and one hand, both hands are really a bit difficult and need to be coordinated left and right. If you say it's difficult to do it in one hand, I think there are probably two possibilities.
First, your stick practice time is too short or improper. Single-stick dance is a relatively elementary movement, and my students have been exposed to dance since the fifth class.
Second, your stick doesn't fit. Dancing flowers belong to performance routines and need performance sticks. What I recommend is a stainless steel performance bar of about 250g, which is light, beautiful and elastic.
I'll give you a good suggestion. I found it myself, exactly the same: tie one end of the towel and hold it at the other end as a nunchaku. This will overcome the psychological fear.
Let me tell you some tutorial videos. Search "Li Yutao" on Youku. To tell the truth, this is the most systematic nunchaku video tutorial I have seen in five years.
I wrote all these myself. If you think what I said is reasonable, please adopt it. If you have any questions, please ask.
