The first kind is called flat food.
It is said that flat food is the ancient name of jiaozi; Today, this name continues in Jining, Heze, Liaocheng and parts of Jinan and Weifang in the west of Shandong.
For example, in Strange Tales from a Lonely Studio, there is a description that "the flat food is like a crescent moon, and the cold water pot on the brine won't open".
In the book "A glimpse of Jinan" in the early years of the Republic of China, there was also such a description: "Xiong's flat food building in Jinan Whip Lane has been in business for nearly a hundred years, and flat food has its own specialties. On New Year's Eve or New Year's Day, noodles are the corner, and the stuffing is whatever people want. "
Today, flat food is still a famous snack in Jinan, and there are many restaurants in Jinan named after "jiaozi City".
The second kind is called steamed stuffed bun.
In Zibo, Zaozhuang, Weifang, Rizhao, and some places in Jinan and Liaocheng, jiaozi is called "steamed stuffed bun", and in jiaozi, it is called "wrapped food".
And normal buns are called big buns. Qingdao Dabao is one of the top ten special snacks in Qingdao. When Xiaoyou first arrived in Qingdao, he went to buy Qingdao Dabao and was disappointed. His name is Dabao, and the result is not great at all.
Later, I learned that this so-called big bag means bigger than jiaozi.
The third type is called Guzha.
In Yantai, Qingdao, Weihai, Weifang, Rizhao and other areas, jiaozi is also called "Guzha", and some of them are written as "gūzā" or other words with similar pronunciation.
As we all know, wrapping jiaozi requires many processes, such as stuffing, kneading, adding medicine, rolling skin and so on.
Among them, the most important is the last process, that is, after the dumpling skin is put into the stuffing, it is "tied" first and then "tied".
The so-called hoop, which means tightening in Chinese characters, is only used in circles; To wrap jiaozi's bag is to wrap jiaozi's bag with dumpling stuffing and close the edge.
And Zha, in Chinese characters, means to collect scattered things together and make them into one. If you wrap jiaozi, you should fold the dumpling wrappers and knead them together.
When the hoop and knot are finished, the jiaozi is finished.
