Tomato and Shrimp Soup
Main ingredients: shrimp, tomatoes, eggs, rapeseed, and flour.
Seasoning: chopped green onion, salt, optional sesame oil, coriander.
1. Cut a cross on the top of the tomato and blanch it in hot water. Peel and cut into small cubes. Thaw the shrimps in advance, wash and dry them, and cut into small cubes.
Beat the eggs, wash the rapeseed and cut into small cubes.
2. Take an appropriate amount of flour, add water little by little, and stir into small lumps. (You can adjust the size of the gnocchi according to your own preference. It is recommended to be smaller, as it is easier to cook, delicious and beautiful)
3. Pour oil into the pot, stir-fry the chopped green onion until fragrant, add the shrimp and stir-fry.
4. Stir-fry the shrimp until it changes color, add diced tomatoes and stir-fry.
5. Fry the tomatoes until they become slightly soft, add an appropriate amount of water and season with salt.
6. After the water boils, add the gnocchi evenly.
! ! It is recommended to stir it with chopsticks to prevent the dough from sticking together.
7. Cook the gnocchi until it is set and cooked, then add diced rapeseed.
8. Cook the diced rapeseed until it becomes soft, turn it in circles, slowly and evenly pour in the egg liquid, wait a few seconds, stir evenly and serve.
9. Garnish with coriander and sesame oil according to personal preference.
