There are three names for dumplings in Shandong: Bianshi, Baozi and Guza.
1. Flat food.
It is said that Bianshi is the ancient name for dumplings; to this day, this name is still used in Jining, Heze, Liaocheng in western Shandong, as well as in some places in Jinan and Weifang.
In the book "Jinan Quick View" written in the early years of the Republic of China, there is also such a description: The Xiongjia Bian Restaurant in Jinan's Bianzhi Lane has been in business for nearly a hundred years. , then use noodles to make dimes, and the stuffing can be meat or vegetarian, whatever you want. To this day, flat food is still a famous snack in Jinan, and there are many restaurants in Jinan named after "Dumpling City".
2. Steamed buns.
In Zibo, Zaozhuang, Weifang, Rizhao, and some places in Jinan, Liaocheng, and Jining, "dumplings" are called "baozi" (some places are pronounced close to "baocai"), and "dumplings" are called "baozi". "Eat" is called "eating with steamed buns". In some places in Yantai, it is also called "Baohu".
The normal buns are called big buns. Qingdao Dabao is one of the top ten specialty snacks in Qingdao. When Xiaoyou first arrived in Qingdao, he went to buy Qingdao Dabao, but he was disappointed. The name was Dabao, but it turned out not to be big at all. It wasn’t until later that I learned that the so-called big bag refers to something larger than a dumpling.
3. Guza.
In some areas such as Yantai, Qingdao, Weihai, Weifang, and Rizhao, dumplings are also called "guzha", and are also written as "hoozha" (gūzhā) or "鉉飵" (gǔzhā). "Governance" and other similar-sounding words.
In the Yantai Ye County (today's Laizhou) area, there is a folk proverb that says, "If you enter the Fufu and start the autumn noodles, whoever will not have diarrhea (stomach) for half a year". Correspondingly, dumpling soup is called steamed bun soup. Sometimes, instead of making dumplings, people just make noodle soup, also called 鉉鵵 soup (guza soup, pimple soup).
Classification of dumpling fillings:
