Since it is in March of Yangchun, it was named "Yangchun Noodle".
According to the word "Yangchun" chosen by Emperor Qianlong, it means that Huai'an's payment of taxes to the court is like the growth of all things in spring, full of vitality, and like these noodles, continuous and continuous. Yangchun noodles are also called smooth noodles, clear soup noodles or "clear soup noodles". The soup is fresh, light and refreshing, which is a major feature of Yangzhou. According to folk custom, the tenth month of the lunar calendar is called Xiaoyangchun, and the lingo in Shanghai is that the tenth month is Yangchun. In the past, each bowl of this noodle sold for ten cents, so it was called Yangchun Noodles.
