Fried buns and rice are the most distinctive breakfasts in Shanghai. Shanghai people are used to calling steamed buns "steamed buns", so Shanghai fried buns are also called raw fried steamed buns locally.
fried buns or steamed bread will do. It's a delicious snack anyway. The bottom of the crispy steamed stuffed bun is full of juice and meat. If you make breakfast with a delicious fried bun in the morning, I think it is a great motivation to get up. How to make a fried bun?
1.? First, knead 5 grams of medium gluten flour, about 25 grams of water, 3 grams of yeast powder and 3 grams of baking powder into a smooth dough (it is better to melt the yeast with a little warm water), and then put it aside;
2.? This time is used to make stuffing, chop about 5 grams of pork belly into meat stuffing, then add appropriate amount of salt, sugar, soy sauce and Jiang Mo, stir well, and pump in a little water several times (as mentioned before);
3. Then add a little onion oil or sesame oil and white pepper and stir well. Finally, it is the key point. About 3 grams of jelly is chopped and mixed into the meat stuffing and stirred well.
4.? The noodles with meat stuffing are also made. After simple venting, they are divided into small doses, rolled into dough and wrapped into buns. The amount of stuffing is about as heavy as the dough.
5. After wrapping, you can fry in the pan. Lubricate the bottom of the pan with a proper amount of oil, fry the steamed buns in the middle fire until the bottom is slightly fried, then add about half of the water in the steamed buns, cover them and simmer for about 6 minutes. The steamed buns are basically cooked.
6. Then add a little more oil to heat it, tilt the pan, and let all steamed buns take turns to "soak" in the oil. In about 2 minutes, the steamed buns will be thoroughly cooked, and the bottom will be golden and crispy. Sprinkle sesame seeds and chopped green onion and you can eat it (it is a bit expensive to cook so much. In fact, if you cook it at home, it is ok to fry the bottom with oil and then add boiling water less than half of the steamed buns to cover and stew it).
finally, it's good to get a dip yourself. Personally, I think it's delicious to dip in vinegar.
