Long Chao Shou is a famous traditional snack in Chengdu. Chao Shou is the Sichuan people’s special name for wontons, hence the name Chao Shou.
In the north it is called wonton, but in Sichuan it is called Chaoshou. There is a famous snack called "Red Oil Chaoshou".
If you like spicy food, in addition to soy sauce, sesame oil and mature vinegar, you can also add a spoonful of red spicy oil.
Long Chao Shou originated in the 1940s and is also an old store. But few people know that the founder of Long Chaoshou originally opened a teahouse.
There are teahouses all over Chengdu, and the business of "Nonghua Teahouse" is particularly prosperous every meal time. The source lies in "Nonghua Teahouse", the predecessor of Long Chaoshou. Chaoshou are similar in appearance to wontons, but the difference is that they are larger in size and have more meat fillings. The famous thing about Nonghua Tea Club's Chao Shou is that its original soup is made from chicken, duck and pork. In an era when it was difficult to eat meat, this was considered a luxury. Later, because Chao Shou was so famous, the owner of the teahouse co-opened a snack bar and named it "Long Chao Shou". The fame and reputation of Long Chao Shou were accumulated under this historical background. Of course, it is undeniable that with such innovation and generous use of materials, Long Chao Shou was indeed worthy of the title of "famous gourmet" in that era.
From ancient times to the present, from south to north, from east to west, wontons have settled almost everywhere.
The wontons, each with its square skin and inside, have their own uniqueness, and the thick and light soups have their own tastes.
Few foods have as many names as wontons, which are just a different "vest".
In Fujian and Xiamen, it is also called Bianrou, Bianshi, and Rouyan. Some people in Hubei also call it dumplings and noodles. In Guangzhou, it is called wontons. In Wuhan, wontons are also called dumplings or noodles. , in Nanchang the protagonist has been hidden, and there is only "clear soup".
The most unique and interesting name is Wannan in Anhui. People here often call wontons "baggage". At first glance, I don't know what they are. After tasting them carefully, they are really vivid.
According to "Guang Ya" written by Zhang Yi, a native of the Three Kingdoms Wei Dynasty, there was a food called "wonton" shaped like a crescent moon at that time, which was basically similar in shape to today's dumplings. By the Northern and Southern Dynasties, wontons were "shaped like a crescent moon and were eaten all over the world."
This may be the benefit of change. How can we stay still?
Poet Yang Jingting during the Tongzhi period of the Qing Dynasty wrote a poem about wontons: The wontons are packed with extraordinary flavor, the fillings are melted with spring leeks, which are fragrant when chewed, and the soup is clear and moist, so you won’t find it bland when you kiss it. Only when you swallow it will you know the taste is long.
He made it clear that the charm of wontons lies in the deliciousness of the soup. If the soup is not fresh, eating wontons will become a boring task. The soup is mostly made from pig bones or old hens, and must be sprinkled with seaweed, winter vegetables, pea sprouts, and crystal yellow and crispy dried shrimp skins.
