"Bai Qi Rou" is definitely not the meat of Qin General Bai Qi, but its origin is related to Bai Qi. Although this dish is called Bai Qi Rou, Bai Qi Rou is not a meat dish. Baiqirou has been a traditional delicacy for more than 2,000 years.

Speaking of the origin of this delicacy, it can be traced back to the Warring States Period. At that time, Qin and Zhao fought a three-year battle in Changping with heavy casualties. During the Warring States Period, the situation was severe and war was inevitable. However, the reason why this battle was criticized by later generations was not because of the number of casualties on both sides, but mainly because of the actions of the Qin general Bai Qi after the war.

In the Battle of Changping, nearly 400,000 Zhao troops surrendered. Bai Qi felt that putting them all back would cause trouble in the future. They all recruited them and worried that when they fought against Zhao in the future, these Zhao prisoners would defect in battle. In the end, Bai Qi deceived the Zhao prisoners. When they were unprepared, all nearly 400,000 Zhao prisoners were killed by the Qin army, and only 240 young Zhao people were allowed to return home.

Later, the local people hated Bai Qi’s atrocities for generations. In order to mourn the deceased, they served rice as a dish, used tofu as meat, grilled it over a fire, and mixed tofu residue with minced garlic and ginger to make " "Dipping the head" means pounding Baiqi's brain into puree and eating it with tofu, which is called "Baiqi meat". Later, pepper was introduced to China and became an extremely important condiment in our diet. Therefore, "Bai Qi Rou" has also evolved with the times, and chili oil is added to it, which means Bai Qi's blood. It can be seen that the local people have a deep hatred and hatred towards Bai Qi. Thousands of years later, this hatred has not been eliminated.
