Raw beef must be absolutely fresh and hot, and once it is cooled, it cannot be eaten raw. Beef used for raw food is generally the most tender part of beef tenderloin and beef body. The meat that can be eaten raw is only one-fifth of that of a cow.

There is another horrible way to eat it. The slaughtered cows are peeled and hung there. Diners go up and choose by themselves.
