Cooking skills:
Tips for shrimp selection: 1. Dry body surface. Fresh shrimp looks clean and feels dry. If the shrimp shell sticks to your hands, it means that the shrimp has gone bad. 2. Bright colors. Different species of shrimp have slightly different colors. Fresh shrimps, rock shrimps and grass shrimps are blue, shrimps caught in the sea are pink, and bamboo shrimps and new shrimps with knife forehead are black and white with a slight pink color. If the shrimp has black hair, it is stale shrimp, and the whole shrimp is dark and not bright, which means it has gone bad. 3. Meat shells are closely connected. Fresh shrimp shells are tightly attached to shrimp meat. When peeling shrimps with your hands, the shrimps will stick to your hands, and it takes a little effort to peel the shrimp shells. 4. There is no peculiar smell. Fresh shrimp has a normal fishy smell. If it smells bad, it means that the shrimp has gone bad.
