What principles should be mastered in winery design? How should winery real estate planning be positioned? Lv Wei Chuangjing believes that due to the rapid improvement of people's quality of life, the increasing emphasis on physical and mental health and the increasing number of business banquets, the "purple wave" featuring red wine consumption and winery tourism has become romantic, and a large amount of capital has actively sought new investment models and projects, and the development of wineries has emerged. However, due to the huge differences in the investment environment and wine consumption environment of wineries at home and abroad, the planning, design, development and construction of wineries in China cannot copy foreign models. We believe that the management characteristics, architectural style and scale of the winery depend to a great extent on the location of the winery and the functions given to the winery by the builder. It is necessary to consider the development ideas of Chinese wineries from the functional orientation and layout. Based on the investigation of a large number of wineries at home and abroad in recent two years and the practical experience of nearly ten wineries in Shandong, Ningxia, Hebei and Beijing, I have accumulated valuable experience in the functional positioning and layout of wineries and formed my own set of views.

From the perspective of thematic functions, the functional orientation of wineries can generally consider five modes:

First, traditional wineries are basically planned and built according to the winery model of foreign countries, especially the old world, with red wine production as the absolute core function;

The second is hotel-style winery, which fully integrates the hotel building and service elements into the winery function, highlighting the comprehensive functions of tourism, vacation and business services;

Third, the club winery, in which enterprises or consortia are the main investors or buyers, mainly as their own business holiday platform;

Fourth, villa-style winery, the organic combination of villa function and winery culture, enhances the taste of private vacation or residence;

Fifth, courtyard-style winery downplays the concept of clubs and villas, highlights the production and tasting of red wine, returns to nature, and enjoys aristocratic pastoral life.

But no matter what kind of theme winery, there are similarities or similarities in specific functions, but each has its own emphasis. Judging from the domestic investment and market environment, regardless of the scale and category of the winery, it is generally necessary to realize the functions of production, residence, leisure, reception (room), business, entertainment, fitness, exhibition and so on. Generally speaking, it has six functions: production, cellaring, living, commerce, exhibition and sales, among which production and cellaring are two essential functions, life, commerce, exhibition and sales.

(1) production function, as shown in the process flow chart, in the production workshop, after grapes are ripe and picked, they have to go through the whole process of sorting and removing stems to canned products. The main equipment includes: juicer, filter, centrifuge, freezer, S-type adding machine, fermenter, moisturizing tank, centrifugal pump, screw pump, heat processor, etc.

(2) The function of wine cellar is an important wine storage space of winery. Red wine generally takes 0.5 ~ 2 years to reach the quality of finished wine. In principle, it should be set underground, and the ambient temperature 12 ~ 18 degrees and humidity 70% should be achieved by natural or mechanical means. Wine cellar is generally divided into barrel area, bottle area and wine tasting area;

(3) Residential function is an important part of winery building. The function setting and the organization of traffic streamline should meet the needs of high-end people for life, and be divided into dynamic and static areas, clean and messy areas, and different inside and outside. Generally divided into living rest area, entertainment and leisure area and logistics service area;

(4) Business function, business platform, image window and business card. Functional areas include offices, conference rooms, negotiation rooms, cloakrooms, reception rooms, Berry Bros. & Rudd (wine tasting area), restaurants, public toilets, etc.

(5) Display sales functions, such as cultural display, wine sales, wine culture appreciation showroom, wine tasting sales desk (hall), etc.

(6) Tourism functions, including production line visit, wine culture appreciation, wedding photography, wedding reception, etc.
