Kweichow Moutai Distillery (Group) Xijiu Co., Ltd. (hereinafter referred to as "Xijiu Company") was founded on 1952 and merged into Maotai Group on 1998. It is a holding subsidiary of Maotai Group. Xijiu, a specialty of Xijiu Town, Xishui County, Guizhou Province, is a symbolic product of chinese national geography. Brewing takes local high-quality waxy sorghum as raw material, and wheat is made into high-temperature Daqu, which is piled up and saccharified, fed twice, fermented eight times, distilled nine times, and sealed and stored. With the increase of storage time, there are fewer and fewer free alcohol molecules and less stimulation to the body, so it feels mellow and sweet instead of spicy when drinking.

After testing, the culturable microbial flora in Xijiu Town is relatively stable.
The birthplace of wine science was the main battlefield of the battle of Sidu Chishui. It is also the earliest recorded Chishui River valley in China, the birthplace of brandy and whisky, and is known as a world-class brewing treasure.
