The most important part of the Chinese New Year is the reunion dinner, so the chef at home began to prepare this dinner very early. Chicken, duck and fish are usually indispensable on the dinner table of New Year's Eve, and there are also various braised flavors: chicken feet, pig ears, pig head meat, braised beef and so on. Braised chicken feet

Ingredients: 3 kg of fresh chicken feet, cooking wine, soy sauce, ginger, rock sugar, salt, 3 star anise, 3 pepper 1 pinch, 2 cinnamon 1 piece, 2 cloves, 4 tsaoko 1 piece, 4 fragrant leaves, 3 fennel 1 pinch, and 3 dried peppers.

Exercise:

1. Wash chicken feet and cut off nails. Put it in a pot and add water to stew. Boil for 3 minutes and then take it out.

2. Change a pot of water, add ginger slices, soy sauce, salt and seasoning packets, and boil for 30 minutes to make brine.

3. When making brine, add a little oil to the wok, add rock sugar, cook until it is brown, and then add chicken feet. After stir-frying and coloring, put the chicken feet into the brine. If there is any sugar juice in the wok, you can put it together.

4. After boiling, turn to low fire and marinate for 20-30 minutes, then turn off the fire and stew for several hours.

Stewed chicken leg

Ingredients: chicken leg, ginger, aniseed, dried red pepper, soy sauce, salt, sugar, soy sauce, cooking wine.

Exercise:

1. Make two cuts on the washed chicken leg with a knife, put it in clear water to remove the excess blood, then blanch it in a boiling water pot, and drain it.

2. Add a proper amount of boiling water to the pot, and release one tablespoon, one teaspoon of salt, one teaspoon of sugar, one teaspoon of soy sauce, one teaspoon of cooking wine, aniseed, ginger slices, red dried peppers, etc. , and make marinade.

3. Put the drumsticks into the marinade, and simmer for about 40 minutes after the fire is boiled, until the marinade becomes thick. Soak the marinated chicken leg in marinade before eating, so it will taste fuller.

Braised pork head in brown sauce

Ingredients: pig's head, onion, ginger, garlic, cooking wine, fragrant leaves, pepper, star anise, cinnamon, sugar, soy sauce, salt and dried pepper.

Exercise:

1. Remove the hair from the pig's head and cut it in half with a knife. Pigs' ears are dirty, so they need to be scraped off. (Try to choose clean when buying)

2, put water in the soup pot, also put the pig's head meat, add onions, ginger slices, cooking wine to boil, skim the blood foam, cook for 3-5 minutes, remove and rinse with cold water.

3. Pour clear water into the soup pot, add the cooked pig head, and then add aniseed, fragrant leaves, pepper, cinnamon, star anise, dried Chili, ginger, onion, garlic and soy sauce.

4, another pot, pour a little oil, add white sugar to stir-fry the sugar color, and the soup color changes and bubbles to add boiling water.

5. Pour the sugar water into the pig's head soup pot, color the pig's head meat, cover the pot, boil the water, and simmer for one hour.

6. Take out the pig's head meat, remove the bones, then put it into the soup pot and marinate it with salt for 20 minutes.

Salted pig ears

Ingredients: 2 pig ears, old bittern 1 tablet, marinade 1 package, 30ml soy sauce, rock sugar 15g, proper amount of salt, 20ml of cooking wine and proper amount of onion and ginger.

Exercise:

1, prepare all the ingredients, scrape the pig's ears, and put cold water in the pot to cool it.

2. Put the old bittern into the pot and thaw it with low heat, then add a proper amount of water to the pig's ears.

3, add rock sugar, boil over high fire, skim the floating foam, simmer for 40 minutes, and then add salt to taste.

4. After turning off the fire, cover it and simmer for 20 minutes, remove it and shred it slightly.

Stewed pork knuckle with beer

Ingredients: trotters, garlic, onion, ginger, marinade, beer, soy sauce, rock sugar.

Exercise:

1, wash pig's feet and cut into small pieces;

2. Boil water and add a tablespoon of white wine, put pig's trotters in boiling water, wash the hair after boiling, and control to dry for later use;

2. Put oil in the pot and fry the pig's trotters for color;

3. Put beer, salt, marinade, soy sauce, rock sugar and onion ginger (beaten) into a pressure cooker;

4. Then put in the trotters, choose buttons according to your favorite taste, and cook until the chopsticks are easily inserted into the trotters.
