Pork ribs, chicken gizzards and potatoes.
Ingredients: 500 grams of pork ribs, 500 grams of chicken gizzards, and 2 potatoes.
Accessories: refined salt, monosodium glutamate, sugar, Sichuan peppercorns, aniseed, cinnamon, dark soy sauce, light soy sauce, pressure cooker sauce, dried chili peppers, green onions, and ginger slices.
1. Wash the ribs, chicken gizzards, and potatoes, cut the chicken gizzards into thick slices, and cut the potatoes into hob pieces.
2. Prepare pressure cooker sauce.
3. Prepare other ingredients and seasonings.
4. Blanch the cut ribs and chicken gizzards in boiling water for two minutes, remove and rinse with cold water to remove any impurities and foam and set aside.
5. Heat the oil in the pan. When the oil temperature is 60 to 70% hot, add the potato cubes. Fry until the golden brown shell becomes hard and then take it out.
6. Leave a little base oil in the pot, add peppercorns, aniseed, cinnamon, green onion, and ginger slices. After frying until fragrant, add dried chili peppers. When the color changes, add pork ribs and chicken gizzards. Stir-fry in the pot for 1 minute, then add the fried potatoes, pressure cooker sauce, light soy sauce, and dark soy sauce and continue to stir-fry until color changes.
7. Put all the ingredients into the electric pressure cooker, add 30 ml of water to prevent the bottom of the pot from sticking, and use a meat button or press for 10 minutes.
