Cocoa bean is the fruit of evergreen trees in Sterculiaceae and the flat seed of oval nuts, with oil content of 53% ~ 58%. The squeezed cocoa butter has unique fragrance and melting performance. Cocoa powder is cocoa beans (seeds) taken from the pods (fruits) of cocoa trees, cocoa bean fragments (commonly known as cocoa cakes) obtained by fermentation, coarse crushing and peeling, and the powder is defatted and crushed by cocoa cakes.
