What is palos? What a strange name.

Palos is a fermented ham, which is a product of Delis in Shandong. Palos selected the hind legs of Audley pigs whose natural growth period exceeded 10 month as raw materials, and only 10 pigs were selected from every 100 pigs. Pigs grow at 35 degrees north latitude and are considered as the best breeding areas for livestock and poultry. They are scattered in grassland forests, playing and chasing among trees, eating grass, wild fruits, drinking clear springs and morning dew, which are ecologically organic and naturally healthy. Lean meat rate is about 60%, and intramuscular fat is about 4%. Its meat is tender, rich and mellow, and contains unsaturated fatty acids which are rare in pork. It is the only raw material choice for making palos fermented ham.
