After the Gengzi indemnity in the late Qing Dynasty, the Empress Dowager Cixi returned to Beijing from Xi'an and stopped for a meal when passing by Neiqiu. The person in charge of the temporary royal meal was a local chef. He was concerned that the Empress Dowager's teeth might not be good in her old age, so she added soup to cook soft stir-fried meat and served it. After tasting it, Cixi praised it very much. When asked about the name of the dish, the local officials did not know it, so they invited the chef to see it. The chef thought there was soup in the meat, so he replied: "Fried meat with juice", which is today's pork with juice.
