In the Tang and Song Dynasties, hotels were very prosperous. In terms of business projects, there are various types of hotels. For example, in Hangzhou during the Southern Song Dynasty, there were direct sales stores specializing in wine, as well as tea hotels, steamed stuffed bun hotels, zhaizi hotels (outdoors that looked like official residences), San hotels (ordinary hotels), and Cang hotels.
In terms of business style, there were Northern Restaurants, Southern Restaurants, Sichuan Restaurants in Kaifeng and Hangzhou in the Song Dynasty, as well as the "Luo Hotel" with Shandong and Hebei flavor.
After the Song and Yuan Dynasties, restaurants generally referred to large hotels with majestic buildings and high-level services, while hotels gradually referred to restaurants that specialized in wine and had no or only simple dishes to accompany wine.
As far as business ownership is concerned, there are private kitchen hotels, vegetarian kitchens operated by temples, and hotels owned by officials.
