Sanhe pickles and Simei pickles are both traditional and famous dishes in Yangzhou, Jiangsu. The difference is that the names have different meanings. During the Qing Dynasty, Yangzhou pickles were listed as a side dish for the imperial court and won the International Expo Medal and the West Lake Exposition Gold Medal. Before liberation, there were more than 100 soy sauce shops in Yangzhou, most of which were front-end shops and back-end shops. Each one had its own tricks, among which Sanhe and Simei were the most popular.
"Four Beauties" was named by a scholar in the early Qing Dynasty who borrowed the sentence "Four beauties, two are difficult to combine" in "Tengwang Pavilion Preface", which means fresh, sweet, crisp and tender.
