1. Youtu Tou
YouTuTou ranks first among the four rabbit heads in Chengdu. It has developed into a signature delicacy in Dujiangyan. People who go to Dujiangyan must come here. Have a taste. Yoututou was founded in the early 1990s. It selects the best fresh rabbit heads, marinates them to remove the smell, braises them over a slow fire, and then cooks them until the fire reaches nine minutes. Set them aside to cool until the guests order, and then add the ancestral ingredients. The secret braised sauce is heated up in the pot, and the ingredients are added to the pot to mix into five-spice and spicy flavors. Diners can choose according to their own taste.
2. Scallion rolls
Scallion rolls are considered an indigenous snack in Dujiangyan. Even the locals can’t tell when they became popular. But in Wuguiqiao Street, Sanfangban Alley and other places, the "onion roll" team accounts for half of the country. There is no formal store, so sit down at a few low tables and chairs on the street. The boss will bring you a plate of dough, a few small plates of shredded radish and lettuce, roll it up and dip it in the secret seasoning, stuff it into your mouth, and the spicy taste will be secreted on the tip of your tongue. 3. Zhazha Noodles
Zhazha Noodles is a noodle dish in Western Sichuan with a rich Western Sichuan flavor. The method is to take the cooked noodles out of the pot without any moisture, and then sprinkle them with ingredients made of ground fried peanuts, sesame seeds, sugar, etc. while they are still hot to cover the noodles completely. 4. Ice powder
For the natives of Dujiangyan, in their childhood when supplies were scarce, having a bowl of ice powder in the summer was the happiest thing. Nowadays, on the streets of Dujiangyan, you can still hear the faint cry of "ice powder, ice powder, ice powder, ice powder". The price is very cheap. Just add watermelon cubes, bayberry and other preserved fruits to the brown sugar water. Maybe the taste is not as good as before, but it is good to have some memories and cool down.
5. Ginkgo Stewed Chicken
This is a famous dish in Qingcheng Mountain and a basic dish regardless of the season. The local area is rich in ginkgo. The traditional method is to peel off the hard outer shell of the ginkgo and take the light yellow core inside and stew it with native chicken. The finished chicken soup is white in color and has delicious meat. It is especially nourishing and health-preserving with the fragrant and soft glutinous ginkgo. This dish can be tasted in almost all restaurants in Qingcheng Mountain, from large and elegant restaurants to small farmhouses in the back mountains.
Dujiangyan is located in the west of Dujiangyan City, Chengdu City, Sichuan Province, on the Minjiang River in the west of the Chengdu Plain.
