Ding Deshan, the eldest Hui nationality, is from Cangxian County, Hebei Province. In the 29th year of Guangxu (1903), Ding Deshan borrowed a trolley, a large bench and a chopping board from relatives and friends, and borrowed a few yuan from his family, Ding Ji Duck House, and came to the newly opened Dongan Market. A small food stall was set up on the east side not far from the north gate.

He paid attention to the needs of customers and added popular stick noodles pastry pancakes and hot japonica rice porridge to the stall. "Stands" also need to be improved. He used the money he saved to build a shed at the original stall, and in 1906 he put up a signboard called "Dong Lai Shun Porridge Stall". Dong'an Market is outside Donghua Gate, which belongs to the inner city of Dongcheng; he lives in Erli Village outside Dongzhimen. This series of "east", catching up with the good fortune of "the rising sun" and "the purple air coming from the east", he thinks it is his good luck The root of the business. He attaches great importance to "shun". As long as everything goes smoothly, "business" will be "rich and prosperous as far as Sanjiang". This is the goal that Ding Deshan has believed in and pursued throughout his life.

He wanted everything to go smoothly, but times turned out to be unfavorable. On the evening of February 29, 1912, Cao Kun's troops looted and burned Wangfujing and Dong'an markets. Ding Deshan's small porridge shed was reduced to ashes, but he was not discouraged and refused to accept his fate. With the help of the factory manager, he borrowed materials and wages and built several gray-tiled houses on the burned-out ruins. Dong Laishun passed the porridge stalls and porridge sheds, entered the venue and took a seat, and then built a halal restaurant. In 1914, the newly opened Dong Laishun added the popular "explosion, roasting and boiling" mutton in Beijing at that time, and officially changed its name to "Dong Laishun Mutton Restaurant".
